GARLIC BUTTER SEAFOOD BOIL

Ingredients
2 lbs large shrimp, shells on
1 lb crab legs (snow or king), split if needed
1 lb mussels, debearded and rinsed
1 lb clams, scrubbed
4 ears of corn, cut into thirds
1½ lbs small red potatoes, halved
1 stick (½ cup) unsalted butter
6 garlic cloves, finely minced
1 shallot, finely chopped (optional)
2 tbsp Old Bay seasoning (plus more for garnish)
1 tsp smoked paprika
1 tsp cayenne pepper (adjust to taste)
1 lemon, zested and cut into wedges
2 bay leaves
1 bunch fresh parsley, chopped
Salt and black pepper, to taste
2 quarts water (or seafood stock)
Equipment
Large stockpot (at least 8 qt)
Colander or large slotted spoon
Large serving tray or newspaper-lined table
