Step 1: Prepare the Chicken Mixture
In a large mixing bowl, combine the shredded chicken, cheddar cheese, Parmesan, minced garlic, chopped onion, and parsley.
Add paprika, salt, and black pepper. Mix thoroughly so the spices and herbs are evenly distributed.
Step 2: Bind the Fritters
Crack the eggs into the bowl and mix until the ingredients start to stick together.
Gradually add the flour and breadcrumbs, folding gently until the mixture holds shape but isn’t too dry. You want a slightly sticky consistency that can be formed into patties.
Step 3: Shape the Fritters
Scoop a handful of the mixture (around 2 tablespoons) and shape it into small, round patties or slightly flattened disks.
Place them on a plate lined with parchment paper.

Step 4: Heat the Oil
Pour about ¼ inch of oil into a large frying pan and heat over medium heat.
Test the oil by dropping a small piece of the mixture in — it should sizzle immediately.
Step 5: Fry the Fritters
Carefully place the fritters into the hot oil, making sure not to overcrowd the pan.
Fry for 3–4 minutes on each side, or until they are golden brown and crispy.
Remove them with a slotted spoon and drain on paper towels to remove excess oil.
