- Preheat oven to 375°F (190°C).
- In a skillet, melt butter and sauté onions over medium-low heat until golden and soft (about 15–20 minutes for max flavor). Add a pinch of salt while cooking to help them break down.
- In a large bowl, combine:
- Shredded chicken
- Cooked onions
- French onion soup
- Sour cream
- Garlic powder
- Salt & pepper
- Half of the shredded cheese
- Mix until creamy and well blended. If it’s too thick, stir in a splash of milk or cream.
- Spoon into a greased 9×13” casserole dish. Sprinkle remaining cheese on top.
- Bake uncovered for 20–25 minutes, or until bubbly and hot.
- Top with crispy French-fried onions and bake for another 5–8 minutes, until golden and crunchy.
- Let sit for 5 mins, then dig in!
