1/2 cup warm milk
1/2 cup vegetable oil
1/2 cup sparkling water at room temperature
1 teaspoon dry yeast
1 tablespoon sugar
1/2 tablespoon salt
3 cups flour (about 450g)
For the filling:
3 medium potatoes
100 g grated cheese
1 handful chopped green onion
1 tablespoon butter
Salt and pepper to taste
Preparation
In a large bowl, mix the warm milk, oil and sparkling water. Add the yeast, sugar and salt, and mix well until a foamy mixture forms.
Add the 3 cups of flour a little at a time, mixing first with a spoon and then kneading with your hands. Knead for 3 minutes until you get a soft dough that does not stick to your hands.
Cover the dough with a cloth and let it rest for 30 minutes.
Meanwhile, cook the potatoes in water until tender. Drain them and puree, adding the butter, grated cheese, green onion, salt and pepper. Let cool.
Divide the dough into 12 equal parts and form balls. Roll out each ball with a rolling pin until it forms discs 20 cm in diameter.
Place a portion of the filling in the center of each disc and close by rolling it up like a loaf, making sure to seal the edges well.
Place the pieces on a greased baking sheet. Brush with milk or egg yolk for browning.
Make small cuts with a knife on top to prevent them from breaking when baking.
Bake at 180°C for 25 minutes or until golden brown.

You can vary the filling with ingredients such as mushrooms, minced meat or spinach with ricotta.
If you don’t have sparkling water, use plain water, but the texture will be a little different.
For extra flavor, sprinkle sesame seeds or poppy seeds on top before baking.
