2 cups cornbread mix
1 cup milk
2 large eggs
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
2 tablespoons butter
Directions
1. Preheat your grill to medium heat.
2. In a large mixing bowl, combine the cornbread mix, milk, and eggs until smooth.
3. Stir in half of the shredded cheddar cheese into the batter.
4. Grease a baking dish with butter and pour in the cornbread batter.
5. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
6. Allow the cornbread to cool slightly, then cut it into slices.
7. Brush each slice with melted butter and coat one side with breadcrumbs.
8. Place the slices breadcrumb-side-down on the grill and cook for 3-4 minutes until grill marks appear.
9. Flip the slices over, sprinkle the remaining cheddar cheese on top, and grill for another 2-3 minutes until the cheese melts.

10. Remove from the grill and serve warm.
Variations & Tips
For a spicy kick, add a teaspoon of chopped jalapeños to the batter. You can also use pepper jack cheese instead of cheddar for an extra layer of flavor. If you’re a fan of herbs, mix in a tablespoon of chopped fresh chives or parsley into the batter. For a sweeter twist, try adding a tablespoon of honey to the cornbread mix and serve with a dollop of whipped honey butter.
