Everyone at home really enjoyed it, so I’m planning to make twice as much next time.

1 fresh pineapple, peeled, cored, and cut into 1-inch chunks
1 pound of bacon (standard cut preferred)
1/4 cup brown sugar
1/2 teaspoon ground black pepper
1/2 teaspoon smoked paprika
Toothpicks, for securing
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Mix the brown sugar, black pepper, and smoked paprika in a small bowl. Set aside.
Wrap each pineapple chunk with a half slice of bacon, securing with a toothpick to hold everything in place.
Carefully roll each bacon-wrapped pineapple in the sugar-spice mixture, ensuring an even coating.
Arrange the wrapped pieces on the prepared baking sheet.
Bake in the preheated oven for 25-30 minutes, or until the bacon is crispy and caramelized.
Allow to cool for a few minutes before serving. Remove toothpicks prior to serving.

Variations & Tips
For a little heat, add a pinch of cayenne pepper to the sugar-spice mixture. If you’re feeling adventurous, try substituting the pineapple with other fruits like mango or apple chunks for a different twist. For a more aromatic version, sprinkle some fresh rosemary before baking. And for those who enjoy a little extra decadence, serve with a honey mustard dipping sauce on the side.
