4 cups frozen tater tots
1 tablespoon vegetable oil
4 large eggs
Salt and pepper to taste
2 tablespoons chopped chives
Ketchup, for serving
Directions
Preheat your oven to 425°F (220°C).
Spread the tater tots evenly on a baking sheet and bake for about 20-25 minutes, or until they are golden brown and crispy.
While the tater tots are baking, heat the vegetable oil in a large skillet over medium heat.
Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
Once the tater tots are done, transfer them to a serving plate.
Place the cooked eggs on top of the tater tots.
Sprinkle the chopped chives over the eggs and tater tots.
Serve immediately with a side of ketchup.
