4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1 cup shredded mozzarella cheese
4 slices of bacon, cooked and crumbled
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Directions
Preheat your oven to 375°F (190°C).
Using a sharp knife, make several cuts across each chicken breast, being careful not to cut all the way through.
In a small bowl, mix together the chopped spinach, mozzarella cheese, and crumbled bacon.
Stuff each cut in the chicken breasts with the spinach, cheese, and bacon mixture.
Place the stuffed chicken breasts in a baking dish and drizzle with olive oil.
Sprinkle garlic powder, salt, and pepper over the top of the chicken.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

Variations & Tips
For a different flavor profile, try using feta cheese instead of mozzarella, or add some sun-dried tomatoes to the stuffing mix. If you have picky eaters, you can omit the spinach or bacon and just use cheese. For a spicier kick, sprinkle some red pepper flakes over the top before baking. You can also experiment with different herbs like basil or oregano to add a fresh twist.
