1 pound ground pork
1 cup breadcrumbs

Directions
In a large bowl, combine ground pork, breadcrumbs, parsley, cilantro, garlic, salt, pepper, and paprika. Mix until well combined.
Shape the mixture into small, round patties, about 2 inches in diameter.
Dredge each patty in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Heat oil in a deep skillet over medium-high heat. Fry the patties in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels.
In a small saucepan, combine honey, soy sauce, apple cider vinegar, and olive oil. Bring to a simmer over low heat, stirring occasionally, until the glaze thickens slightly.
Brush the warm fritters with the herb glaze and sprinkle with additional chopped parsley and cilantro before serving.
