I tried this for first time recently and became obsessed! It’s on the menu again tonight!

4 cups diced potatoes
1 shredded head of green cabbage
1 cup shredded sharp white cheddar cheese
1 stick butter
2 onions
Salt and pepper to taste
Instructions:
1. Boil the diced potatoes until tender. Drain, mash, and set aside.
2. Preheat oven to 400 degrees F and grease casserole dish.
3. In a skillet, melt the stick of butter over medium heat. Add the onions and cabbage and sauté until they turn wilted. Remove from heat.
4. Gently stir in the half of shredded sharp white cheddar cheese and potatoes until cheese melts and blends into the mixture. Season with salt and pepper.
5. Pour mixture into greased casserole dish. Sprinkle remaining cheese on top.
6. Cover with foil and bake for 30 minutes. Bake uncovered for a few minutes at end to get the top golden brown.
