1. In a large skillet, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
2. Add the diced onion and garlic to the skillet and sauté until the onion is translucent, about 3 minutes.
3. Stir in the bell pepper and potatoes, cooking until the potatoes are tender and golden brown, about 10-15 minutes.
4. Add the cooked ham to the skillet and stir to combine.
5. Make four wells in the potato mixture and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking.
6. Season with salt and pepper, then sprinkle the shredded cheddar cheese over the top. Cover again until the cheese is melted.

7. Garnish with the cooked bacon and fresh parsley before serving.
Variations & Tips
For a spicier version, add a diced jalapeño or a pinch of red pepper flakes with the bell pepper. You can also substitute the ham with cooked sausage or leftover roast chicken. If you prefer a vegetarian option, omit the meat and add more vegetables like mushrooms or zucchini. For a touch of sweetness, toss in some corn kernels or diced sweet potatoes.
