3. Dip each goat cheese round in the flour, shaking off excess, then into the egg mixture, and finally into the panko breadcrumbs, pressing gently to adhere.
4. In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering.
5. Fry the goat cheese rounds in batches, about 2-3 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
