Mexican Taco Lasagna
Ingredients
1 lb (450 g) ground beef (or turkey)
1 small onion, finely chopped
2 cloves garlic, minced
1 packet (1 oz/28 g) taco seasoning
1 can (10 oz/283 g) diced tomatoes with green chiles, undrained
1 can (8 oz/227 g) tomato sauce
8–10 small flour or corn tortillas (6″ diameter)
1 can (15 oz/425 g) black beans, drained & rinsed
1 cup frozen corn kernels, thawed
2 cups shredded Mexican-style cheese blend
½ cup sliced black olives (optional)
2 tbsp chopped fresh cilantro (plus more for garnish)
Salt & pepper, to taste
Nonstick cooking spray
