4 medium-sized potatoes, diced
6 slices of bacon, chopped
2 tablespoons olive oil
2 tablespoons honey
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika

Directions
Preheat your oven to 400°F (200°C).
Spread the diced potatoes on a large baking sheet.
Drizzle the olive oil over the potatoes and toss to coat evenly.
Sprinkle the salt, black pepper, garlic powder, and smoked paprika over the potatoes, and toss again to distribute the seasonings.
Scatter the chopped bacon over the potatoes.
Roast in the preheated oven for 25 minutes.
Remove the baking sheet from the oven and drizzle the honey over the potatoes and bacon.
Toss everything gently to coat with honey, then return to the oven.
Roast for an additional 10-15 minutes, or until the potatoes are golden and crispy, and the bacon is caramelized.
Remove from the oven and sprinkle with fresh parsley, if using, before serving.
