Directions
Rinse the rice under cold water until the water runs clear to remove excess starch.
In a medium saucepan, combine the rinsed rice, coconut milk, water, lime zest, lime juice, and salt.
Bring the mixture to a boil over medium-high heat, stirring occasionally.
Once it reaches a boil, reduce the heat to low, cover the saucepan, and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
Fluff the rice with a fork and transfer it to a serving bowl.
Top the rice with toasted coconut flakes and garnish with lime wedges before serving.
