Pot Roast Recipe

  1. Season and Sear: Season the roast with salt and pepper. Heat oil in a large pot and sear the roast on all sides for about 4-5 minutes per side, until browned. Remove and set aside.
  2. Cook Vegetables: In the same pot, sauté the onions, garlic, carrots, and potatoes until they start to soften.
  3. Add Liquids and Roast: Pour in beef broth and Worcestershire sauce. Add fresh thyme and rosemary. Return the roast to the pot.
  4. Simmer and Cook: Cover the pot and cook over low heat for 3-4 hours, or until the meat is tender and falls apart easily.
  5. Serve: Remove the roast from the pot, slice, and serve with the cooked vegetables and some of the rich gravy from the pot.
