Preheat & Prep:
Grill or Oven: Preheat to 400°F (200°C).
If cooking over a campfire, get a good bed of hot coals going.
Parboil Potatoes (Recommended):
Boil baby potatoes for about 10 minutes until just fork-tender. This ensures even cooking in the foil.
Assemble Foil Packs:
Tear 4 large sheets of heavy-duty foil (about 12–16 inches each).
Divide the shrimp, corn, potatoes, and sausage evenly among the sheets.
Drizzle with olive oil or melted butter.
Sprinkle with Old Bay, garlic powder, salt, and pepper.
Toss gently to coat, then seal each packet tightly by folding the foil over and crimping the edges.
Cook:
Grill or Oven: Place foil packs on the grill or a baking sheet in the oven. Cook for 20–25 minutes.
Campfire: Place directly on hot coals and cook for 15–20 minutes, turning once.
Finish & Serve:
Carefully open foil packs (steam will be hot!).
Garnish with chopped parsley and a squeeze of lemon juice.
Serve hot right from the foil or plate up.
