Ingredients
For the Chicken
Chicken breasts (boneless, skinless) 5
Unsalted butter, divided 6 tablespoons
Salt ½ teaspoon
Coarse black pepper ¼ teaspoon
Italian seasoning 1 teaspoon
For the Lemon Sauce
Lemons, juiced and zested 2
Garlic cloves, minced 2
Half and half 1 cup
Cornstarch 1 tablespoon
Chicken base (optional) 1 tablespoon
Instructions
Season & Sear:
Sprinkle chicken with salt, pepper, and Italian seasoning. In a hot skillet with 1 tablespoon of butter, sear each breast for 4–6 minutes per side until golden brown.
Slow Cook:
Place seared chicken in the slow cooker. Pour over the lemon juice and zest, add minced garlic, and top with the remaining butter.
Let It Simmer:
Cover and cook on low for 4 hours or high for 2 hours until chicken is tender.
Whisk the Sauce:
In a bowl or measuring cup, mix half and half, cornstarch, and chicken base until smooth.
Finish It Off:
Pour the cream mixture into the slow cooker, stir gently, and cook on high for 1 more hour, until the sauce is thick and luscious.
