What will you need?
4 teaspoons unflavored and unsweetened gelatin
200 ml hot water
2 tablespoons of whey protein (or powdered milk if you prefer)
1 tablespoon unsweetened cocoa powder
Step by step
Hydrate the gelatin:
In a small bowl, add the 4 teaspoons of unflavored gelatin. Add the 200 ml of hot water (not boiling) and stir well until completely dissolved.
Add the protein and cocoa:
Once the gelatin is dissolved, add the 2 tablespoons of whey protein (or powdered milk) and the tablespoon of unsweetened cocoa. Mix vigorously with a hand or electric whisk until a homogeneous and somewhat foamy mixture is formed.
Pour into molds:
Divide the mixture into individual molds or a larger container, depending on your preference. Refrigerate for at least 2 hours or until firm.
Serve and enjoy:
Once firm, you can unmold and serve. It is left with a smooth texture, similar to a creamy jelly or light mousse!
Variants
Vanilla version: Use vanilla flavored protein and omit the cocoa. You can add natural vanilla essence to enhance the flavor.
With coffee: Replace 50 ml of water with hot coffee. Ideal for a more intense version.
Creamier: Add a tablespoon of plain unsweetened Greek yogurt to the mixture before putting it in the fridge.
Fruit version: Use strawberry-flavored protein and add a few drops of natural fruit essence.
Useful tips
Optional sweetener: If you want a sweeter taste, you can add a few drops of liquid stevia or erythritol to taste.
Recommended protein: Use a good quality protein, preferably without additives or added sugars.
Airier texture: If you whip the mixture for a few minutes before refrigerating, you’ll get a more mousse-like result.
Storage: Store dessert in the refrigerator, covered, for up to 3 days.
