The Best Garlic Butter Chicken with Parmesan Rice
Season chicken with salt, pepper, and garlic powder. Heat olive oil in a large nonstick skillet over medium heat. Cook chicken until browned and cooked through. Remove chicken from skillet, cover, and set aside.
In the same skillet, add butter, minced garlic, red pepper flakes, and 1/2 teaspoon salt. Sauté garlic for 3 minutes, making sure it doesn’t burn.
Increase heat to medium-high and add white wine. Stir vigorously to combine wine with butter. Cook for about 5 minutes, until reduced by half. Set aside 2 tablespoons of sauce for later.
Add rice to skillet and stir for 3-4 minutes, until beginning to brown. Add chicken broth and remaining 1 teaspoon salt. Bring to a low boil, then reduce heat to medium-low, cover, and cook for 20 minutes. Stir occasionally for the first 15 minutes.
Sprinkle Parmesan cheese over rice. Place chicken tenders on rice and drizzle with reserved pan sauce. Cover, remove from heat, and let sit for 5 minutes. Garnish with Parmesan cheese and fresh parsley if desired.
