Directions
In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
Add the shredded cheese, corn kernels, and chopped green onions to the dry ingredients and mix until well combined.
In a separate bowl, beat the eggs and milk together, then pour the wet mixture into the dry ingredients, stirring until just combined. The batter should be thick but mixable.
Heat about half an inch of vegetable oil in a large skillet over medium heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
Spoon heaping tablespoons of the batter into the hot oil, being careful not to overcrowd the pan. Flatten slightly with the back of the spoon.
Fry the fritters for about 2-3 minutes on each side or until they are golden brown and crispy.
Remove the fritters from the oil and drain on paper towels. Serve hot.
