2. In a shallow dish, combine the cornmeal, Cajun seasoning, garlic powder, onion powder, cayenne pepper, black pepper, and salt.
3. Place the beaten eggs in another shallow dish.
4. Dip each fish strip into the beaten eggs, then dredge in the seasoned cornmeal mixture, making sure each piece is well-coated.
5. Arrange the coated fish sticks on the prepared baking sheet.
6. Bake in the preheated oven for 20 minutes, or until the fish is cooked through and the coating is crisp and golden.

7. Serve hot, garnished with lemon wedges if desired.
Variations & Tips
For those who aren’t as keen on the heat, you can reduce the cayenne pepper or omit it altogether. You might also add a teaspoon of dried thyme or oregano to the cornmeal mix for an herby touch. If allergies are a concern, a good substitute for the eggs can be a brush of mayonnaise or mustard for adherence of the cornmeal to the fish. Lastly, feel free to experiment with different types of fish to find the one that best suits your family’s taste!
