6 cups fresh peaches, peeled and sliced
1 cup granulated sugar
1/2 cup brown sugar
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1 cup all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 cup whole milk
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
Directions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, and lemon juice. Stir to coat the peaches evenly and set aside.
In a separate bowl, whisk together the flour, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until a smooth batter forms.
Pour the batter into a greased 9×9 inch square baking pan, spreading it evenly across the bottom.
Spoon the peach mixture evenly over the batter, making sure to distribute the slices and juices throughout.
Sprinkle the shredded coconut over the top of the peaches.
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the peaches are bubbling.
Allow the cobbler to cool for at least 10 minutes before serving to let the flavors meld together.
Variations & Tips

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend. If you prefer a spicier flavor, add a pinch of nutmeg or ginger to the peach mixture. You can also experiment with different fruit combinations, such as adding raspberries or blueberries for additional flavor complexity. If you enjoy a crunchier topping, mix some chopped pecans or walnuts with the shredded coconut before sprinkling on top. To reduce the sugar content, you can use unsweetened coconut and adjust the sugar quantities to taste.
