2 large sweet potatoes, peeled and grated
1 small onion, grated
2 large eggs, beaten
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cinnamon
Vegetable oil for frying
2 apples, peeled, cored, and chopped
1/4 cup water
1 tablespoon lemon juice
1 tablespoon sugar
Directions
1. In a large bowl, combine the grated sweet potatoes and onion. Use a clean kitchen towel to squeeze out excess moisture.
2. Add the beaten eggs, flour, salt, pepper, and cinnamon to the sweet potato mixture. Stir until well combined.
3. Heat a generous amount of vegetable oil in a large skillet over medium heat.
4. Scoop about 1/4 cup of the sweet potato mixture into the skillet, flattening it slightly with a spatula. Repeat with more mixture, being careful not to overcrowd the pan.
5. Fry the latkes for about 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
6. For the apple sauce, combine the chopped apples, water, lemon juice, and sugar in a small saucepan. Cook over medium heat until the apples are soft, about 10 minutes.
7. Mash the cooked apples with a fork or blend for a smoother sauce. Serve warm or at room temperature with the latkes.

Variations & Tips
For a gluten-free version, substitute the all-purpose flour with almond flour or a gluten-free flour blend. To add a savory twist, incorporate chopped fresh herbs like parsley or chives into the latke batter. For an extra kick, add a pinch of cayenne pepper or smoked paprika. If you prefer a sweeter apple sauce, increase the sugar to taste or add a dash of cinnamon for warmth. Experiment with different types of apples for the sauce to find your preferred flavor profile.
