1 cup quinoa, rinsed
2 cups water
1/4 cup olive oil
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup fresh basil, chopped
Directions
1. In a medium saucepan, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water is absorbed.
2. Remove the quinoa from the heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, parsley, mint, and basil.
5. Pour the dressing over the quinoa mixture and toss to combine.
6. Serve immediately or refrigerate for up to 2 days for the flavors to meld.

Variations & Tips
For a Mediterranean twist, add some crumbled feta cheese and sliced olives. If you prefer a bit of sweetness, toss in some dried cranberries or raisins.
