Ingredients
For about 12–15 fritters, you will need:
2 cups cooked chicken, shredded (rotisserie chicken works great)
1 cup shredded cheddar cheese (or a blend of mozzarella and cheddar for extra gooeyness)
½ cup grated Parmesan cheese
2 large eggs
½ cup all-purpose flour
½ cup breadcrumbs (panko breadcrumbs give extra crispiness)
2 cloves garlic, minced
1 small onion, finely chopped
2 tablespoons fresh parsley, chopped
1 teaspoon paprika
½ teaspoon black pepper
½ teaspoon salt
Oil for frying (vegetable or canola oil works best)
