Directions
Preheat and Prepare the Crust:
Preheat your oven to 325°F (163°C).
Grease a 9-inch springform pan.
In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the pan.
Make the Cheesecake Batter:
In a large bowl, beat cream cheese and 1 cup sugar until smooth and creamy.
Add eggs one at a time, beating well after each addition.
Mix in vanilla extract, sour cream, lemon juice, and lemon zest until fully combined.
Assemble the Cheesecake:
Pour half of the cheesecake batter over the crust.
Spread a layer of strawberry sauce evenly over the batter.
Pour the remaining cheesecake batter over the strawberry layer and smooth the top.
Bake to Perfection:
Bake for 50-60 minutes, or until the center is just set and the edges are lightly browned.
Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
Chill and Garnish:
Refrigerate the cooled cheesecake for at least 4 hours, or preferably overnight.
Before serving, top with fresh strawberry slices, a sprinkle of lemon zest, dollops of whipped cream, and yellow sprinkles.
