Luxurious Caramel Apple Cheesecake

Ingredients
For the Crust
200 g graham crackers (or digestive biscuits), finely crushed
2 tbsp granulated sugar
100 g unsalted butter, melted
For the Cheesecake Filling
900 g full-fat cream cheese, room temperature
150 g granulated sugar
1 tbsp vanilla extract
3 large eggs, room temperature
120 ml sour cream, room temperature
For the Spiced Apple Topping
3 medium apples (e.g. Granny Smith or Honeycrisp), peeled, cored & sliced ½ cm thick
2 tbsp unsalted butter
2 tbsp brown sugar
1 tsp ground cinnamon
¼ tsp ground nutmeg
Pinch of salt
For the Caramel Sauce
200 g granulated sugar
2 tbsp water
60 g unsalted butter, cubed
120 ml heavy cream, room temperature
Pinch of flaky sea salt (optional)

Instructions
Prepare the Crust:
Preheat oven to 325 °F (163 °C). Wrap the outside of a 9″ springform pan with foil (to prevent leaks).
In a bowl, stir together crushed graham crackers, sugar and melted butter until evenly moistened.
Press mixture firmly into bottom (and 1 cm up sides) of the pan. Bake 10 minutes. Remove and cool slightly.
